Linguini with Tomato/Olive Sauce

Prep Time: 45 minutes (including marinade time)

3 1/2 cups seeded plum tomatoes
1 tsp minced garlic
1/2 cup pitted kalamata olives
1/4 cup diced yellow pepper
1/2 + 2 tsp slivered basil
1/2 cup chopped green pepper
1/4 cup olive oil
2 Tbsp fresh lemon juice
salt + fresh pepper
1 pound linguine (I used Central Market whole wheat pasta, and everyone loved it)
8 oz Mozzarella (1/2 inch cubes)
Freshly Grated Parmesan

Combine tomatoes, garlic, peppers, basil, olives, olive oil, lemon juice, and salt & pepper to taste. Let sit at room temperature for 30 minutes, stirring occasionally. This will smell fantastic!
In a large pot, bring water to a boil. Cook linguine.
Mix together noodles and pepper mix. Garnish with basil, mozzarella and parmesan.
